Lasagna flavored "cheese" recipe

There are many recipes for lasagna. This is a very popular recipe that emphasizes the taste of "cheese". It is rich and has a good flavor.

Ingredients
Makes 5 servings
4 carrots
Olive oil
1/4 cup chopped fresh parsley
2 cloves garlic, minced 1/4 cup vegetable broth (preferably low sodium)
1 pound extra firm tofu with herbs (if you do not get with herbs, use your favorite brand and season to taste with herbs of your choice)
8 ounces cream cheese vegan
2 tbsp. lemon juice
1/4 cup nutritional yeast (optional)
1/8 tsp. Nutmeg
1 bag of 16 ounces of spinach
Salt to taste
Pepper to taste
12 slices of cooked lasagna
1-2 pots of your favorite spaghetti sauce
Black olives (optional)
Oregano (optional)

Procedure

Wash, peel and cut carrots into slices and boil. Let them apart.

In a large pot, pour some olive oil and heat over medium-high heat. When oil is hot, add the parsley and garlic. Saute for one minute. Add carrots and vegetable broth. Simmer uncovered for 5 minutes. Remove from heat and let cool.

In food processor, combine the broth, carrots and tofu, vegan cream cheese and lemon juice. Add nutritional yeast, which will give more flavor to cheese, and nutmeg. Mix ingredients to create a thick cream. Combine the cream with the spinach.
